Chocolate Whey Pancakes with Coconut

Intro:
Even if you eat plant-based, you can still enjoy protein-rich pancakes. This vegan version with coconut is irresistible.

Ingredients:

  • 1 scoop vegan whey (unfortunately not yet available here)

  • 50g spelt flour

  • 1 tbsp ground linseed + 2 tbsp water (replaces egg)

  • 1/2 tsp baking powder

  • 100 ml almond milk

  • 1 tbsp grated coconut

Preparation:

  1. First make the linseed egg: mix linseed and water, let stand for 5 minutes.

  2. Mix all ingredients into a batter.

  3. Fry in a non-stick pan over low heat, approx. 2 minutes per side.

  4. Top with extra coconut and dark chocolate chips (optional).

Nutritional value:
≈ 300 kcal | 23g protein | 30g carbohydrates | 9g fat

Tip: Add 1 tbsp cocoa for even more chocolate flavor.
