Intro:
Even if you eat a plant-based diet, you can still enjoy protein-rich pancakes. This vegan version with coconut is irresistible.
Ingredients:

1 scoop vegan whey (unfortunately not yet available here)

50g spelt flour

1 tbsp ground linseed + 2 tbsp water (replaces egg)

1/2 tsp baking powder

100 ml almond milk
-
1 tbsp grated coconut
- Optional: a handful of blackberries
Preparation:

First make the flaxseed egg: mix flaxseed and water, let it sit for 5 minutes.

Mix all ingredients into a batter.

Fry in a non-stick pan over low heat, approx. 2 minutes per side.

Top with extra coconut and dark chocolate chips (optional).
Nutritional value:
≈ 300 kcal | 23g protein | 30g carbohydrates | 9g fat
Tip: Add 1 tbsp cocoa for even more chocolate flavor.
